			<content:encoded><![CDATA[<p>In 2002, Phillip Di Bella’s passion for coffee and entrepreneurial spirit led him to establish a small coffee-roasting operation in the suburbs of Brisbane.</p>
<p>Phillip quickly caught the attention of local cafes with his enthusiasm for both his product and customer service, and very quickly became a key player in the local coffee scene. He named his company Di Bella Coffee.</p>
<p>Over the following 8 years the company has proceeded to thrive and expand with extraordinary speed. This unprecedented growth was recognized in the BRW Fast 100 for 2006, 2007, 2009 and 2010, where Di Bella Coffee is the only coffee company to make the list in consecutive years.</p>
<p>Di Bella Coffee now wholesales to customers Australia-wide, with Roasting Warehouses in Brisbane, Melbourne and Sydney and also retailing through the online Di Bella Coffee store, MyDiBellaCoffee.com.</p>
<p>Continuing the momentum of the company’s expansion, in 2010 Di Bella Coffee took an international leap into the booming Asian coffee market, establishing a headquarters in Shanghai, China. In 2011, Di Bella Coffee will undertake their second venture into international markets with the launch of operations in India.</p>
<p>After a considerable rise in both size and reputation since being founded in 2002, Di Bella Coffee secured our position as one of Australia’s leading coffee companies at the Golden Bean Awards in 2009, taking out the Golden Bean title with the signature blend- Ali Reserve.  This success was continued with 1 silver and 3 bronze in the 2010 competition.</p>
<p>Di Bella Coffee is steadily becoming a household name: 1.4 million cups of Di Bella Coffee are served throughout Australia every week and the company supplies over 1200 wholesale accounts around the country.</p>
<p>In 2010 Di Bella Coffee achieved another coup in the company’s remarkable history, establishing a Green Bean buying branch of the business that effectively extends Di Bella Coffee’s operational reach from coffee crop, to coffee cup.  Crop to Cup is Di Bella Coffee’s green bean purchasing program, dedicated to sourcing green coffee beans from coffee-growing regions around the world and working alongside the coffee-growers to reach our shared goals. <p>We roast our coffee on site on our Probat L5. We choose the Probat not only because we believe it produces amazing coffee but also because it gives a great hands on feel to every batch.<br />
We source high quality, specialty grade, and seasonal, traceable green coffee. By sourcing coffee that can be traced back to specific farms we believe we can produce a better and more sustainable product and also better educate everyone who comes into our cafe. Check out some of the farm profiles on our current coffees page to get a better idea of this. I n the cafe we use local unhomoginised Maleny Daries milk. </p>
<p>Our Gear.</p>
<p>We want to serve the best quality coffee we possibly can and while this starts with great coffee and knowledge of your art we also believe having the best gear available doesn&#8217;t hurt.<br />
We choose to go with our Slayer espresso machine because it is so hands on. You need to watch and think about everything you&#8217;re doing while working on this machine and in the end we think this produces quality in the cup, which is our aim.<br />
Some of our other gear includes Mazzer Robur grinders, a reverse osmosis water filter and our Probat L5 from Wolff Coffee Roasters.</p>
<p>Five Star Day:<br />
This is our seasonal blend and represents everything we know and love about espresso coffee. It has no set origins and will constantly evolve as we learn more about coffee and new crops arrive. </p>
<p>Musasa:<br />
Musasa is back for another year, one of our favorites as espresso last year.<br />
A new coffee for us, this will feature as filter coffee. Very sweet, juicy and clean.  </p>
<p>Blackburn &#8216;Clouds of August&#8217;<br />
New arrival from Colombia. Sweet, thick and red fruit juciy. Will feature as both espresso and a filter coffee.  </p>
<p>Alto Palmar<br />
This coffee from Tanzania has a unique sweetness and orange and toffee flavours. Will feature mostly as filter coffee.</p>
<p>Ngorongoro Blue<br />
This coffee from Tanzania has a unique sweetness and orange and toffee flavours. Will feature mostly as filter coffee.</p>

<p>Ex-Melbourne barista Sean Cheshire is leading the team, who are brewing the best freshly ground Di Bella coffee five days a week. Our caffeine-induced buzz may entice us to go on about how great the service is, how the beans are Fair Trade-sourced, what a massive bargain it is to get a 8oz flat white for only $2.50 in this town (not to mention the taste) but we believe that like all great art, it must be experienced! So test the waters and let us know what you think… The Fat Man is already a convert. Every cup supports us here at Metro Arts, so drink up and keep art piping hot!</p>

			<content:encoded><![CDATA[<p>First there was Papa Merlo, who started a little trattoria in his homeland in Torano, Italy.  Then, his son a budding adventurer, Gino Merlo migrated to Australia and bought with him Queensland’s first Italian espresso machine.  And then there was Dean.. a bold pocket rocket who took coffee beans to a whole new level.</p>
<p>Dean loved coffee so much he roasted it himself.  From humble beginning, he started BarMerlo an Italian espresso bar in Queen St, down town Brisbane. Next he created a Merlo Torrefazione in Fortitude Valley. A unique store dedicated to roasting and selling coffee beans.</p>
<p>“No pomp and ceremony here,” said Dean.<br />
“This store will be dedicated to the bean.”</p>

			<content:encoded><![CDATA[<p>The brothers are a diverse group of siblings in both personality and skills.</p>
<p>Having experienced living in; three states of Australia, North America, Asia as well as travelled worldwide.</p>
<p>Prior to brother espresso they have toiled in Her Majesties Services, printed wine labels for the world, designed hotels, back packed Europe and North America and administered in childcare and insurance.</p>
<p>Brother Espresso was born when members of the Gowty family came to a similar crossroad.</p>
<p>Over a few fine ales they were discussing the need for a new challenge, one where they could control their own destiny. Under these circumstances most things seem possible. </p>
<p>After a visit to Melbourne we discovered a coffee culture that appealed, and it was thought that something similar could born in the debris of the heritage listed Watsons Plumbing Building that we discovered in Margaret Street. Over a 6 month period with the help of family, friends and understanding associates we hand built the Margaret Street space from the ground up.</p>
<p>Despite giving the space a soul, on opening day there were some seriously nervous brothers, mothers fathers and spouses hoping that &#8220;they would come&#8221; and keep coming.</p>
<p>Our fears were soon allayed and we discovered that our commonsense approach to coffee and simple affordable food offerings were what our customers were looking for.</p>
<p>Each year since we have added a new and different brother espresso cafe; Wickham House (CBD), Riding Road (Bulimba) and our Roastery Cafe in Warry St (Fortitude Valley). </p>
<p>Our aim is to provide good coffee and food in a comfortable environment at an affordable price.</p>
<p>We don&#8217;t always get it right, but we find that our customers are forgiving and accept what we are about,</p>

<p>~ Brother Espresso House Blend ~</p>
<p>The House Blend offers aromas of soft baking spices and toffee with flavours of ripe berry fruits, sweet citrus and hints of caramel.<br />

~ Fifth Battery Seasonal Blend ~ </p>
<p>The Seasonal Blend offers lovely fruit notes, smooth milk chocolate sweetness and a slight fruity brightness.<br />

We recommend you allow our coffees to degas and rest a minimum of 7 days after the date of roast in the original sealed bag at room temperature before use. </p>
<p>Store it in a dark place away from heat, moisture or light. </p>
<p>Coffee starts to loose its sweetness and aroma after 3-4 weeks, make sure you use it before it is too late.</p>
<p>~ David’s&#8217; Cold Brew Coffee Extract ~</p>
<p>Gently brewed from Fifth Battery roasted beans on a daily basis. The cold-brew process extracts the coffee bean&#8217;s delicious flavour and eliminates much of the acidity, producing a bold, super-smooth coffee extract.</p>
<p>During the cold-brew process, time replaces heat.</p>
<p>Cold-brewing ground beans produce a coffee that is naturally low in acid &#8211; approximately 67% less acidic than coffee brewed by conventional hot-brew methods.</p>
<p>A roasted coffee bean contains many compounds that are extracted during the brewing process. Some of those compounds, including certain oils and fatty acids, are soluble only at a high temperature.</p>
<p>During the cold brew process, coffee beans are never exposed to high temperature.</p>
<p>Cold water brewing extracts the delicious flavour compounds (and some of the caffeine) from coffee beans, but leaves behind some of the bitter oils and biting fatty acids. These are the same bitter acids and fatty oils that surface to the top of your hot cup of coffee, and give hot-brewed coffee that familiar &#8216;bite&#8217; (thus the reason that some 8 out of 10 people attempt to soften the acidic taste by adding milk to their coffee).</p>
<p>The cold-brew process creates a balanced and distinctively smooth coffee.<br />
~ Serving Instructions ~</p>
<p>Davids&#8217; Cold Brew Coffee Extract produces a naturally low acid, bold yet smooth coffee concentrate that may be refrigerated for up to 21 days without noticeable deterioration in taste or freshness. And, importantly, there&#8217;s no waste.</p>
<p>Davids&#8217; can be made one glass at a time simply by adding cold water or milk over ice. </p>
<p>We recommend a ratio of (1) one part coffee concentrate to (2) two parts water, milk.</p>
<p>One of the benefits of using the Davids&#8217; system is that you can mix to taste (make it as strong or as weak as you prefer).</p>
<p>You can sweeten to taste by adding a liquid sweetener such as Agave Syrup.</p>
